The Rocket Giotto Evoluzione V2 Espresso Machine may wield a larger price tag than many lesser espresso machines, but just look at it.
It has been heralded by many a barista as offering commercial quality, Italian espresso style in a sleek domestic package.
Aesthetically speaking, this is one of the best-looking espresso machines out there, in our opinion.
Working in tandem with the right coffee grinder, and you’ve got yourself one superb-tasting espresso there in front of you, not to mention the multitude of espresso-based drinks you can also create with this machine, from cappuccinos, to lattes, to Americanos, to flate whites, and the list goes on.

Aside from its streamlined good looks, the Giotto Evoluzione V2 also features an E61 group, is made from AISI 304 stainless steel, has a heat exchanger (HX), and features a solid brass end plate that aids in thermal stability and heat retention.
It certainly looks to be a finely-crafted machine seems to have everything you could want in an espresso machine, but let’s have a closer look.

First of all, should you order this 60 pound, 17 x 13.5 x 15 ” bad boy, your Rocket Giotto Evoluzione V2 HX Espresso Machine will arrive in a large box and, once you tear it open, you will get the following:

Not a bad haul, but since you’re paying upwards of $2 K for a new one of these machines, you’d expect a few extras to come with.
Of course, you’re not getting the best tamper out there, and a cleaning cloth really isn’t an excuse to charge upwards of $2 K for an espresso machine, even if it is micro fiber.
So the actual machine ought to be something special…
Well then, how about we have a look at her?

As you can see from the above video, getting this machine up and running doesn’t require much in the way of set-up, but you will need a premium coffee grinder and some fresh espresso beans to ensure that you’re putting the good stuff into your espresso machine in order to get the right stuff out.

Why A Rocket Giotto?
If you are opening up your own small coffee shop, having a Rocket Giotto would be an excellent choice because it brews great espresso, and it is a true workhorse.
Sure, there are larger espresso machines out there for such a purpose, but not all of them exude the class and elegance that the Giotto does.
As we say, if you are opening a cafe with high traffic, the Giotto may not be what you want, as it is, at the end of the day, meant for domestic use, but for a smaller establishment, it may well be perfect.
Also, if you plan to brew at home, this machine is a real darling and you would be treating yourself to something really special to have this on your counter.
Take note of the dimensions we mentioned earlier, but if you have the space for it, not to mention the budget, then the Giotto would be a truly great choice for an at home espresso machine.
Rocket Giotto – Specs
If you look at the lower part of the machine, there are two easy-to-read meters that show the steam boiler and the pressure of the brew head respectively.
These indicators clearly show you where your Rocket Giotto is at at all times, with concise bar pressure measurements that will assist you with getting the ideal brew.
The water tank holds 2.9 liters of fresh water and has a low level indication system to warn you when water is scarce.
Once you have filled the water tank located on the top of the machine, open up the steam valve, and turn the indicator button on (it’s on the left side of the machine) and then just wait.
The steam valve must be opened because it is an empty air chamber that has to release all the air pressure that happens inside once the water gets boiled.
Whatever you do, do not forget to open the steam valve, otherwise nasty things may happen. This is done only once actually, with the initial start up, afterwards you will be fine.

The Rocket Giotto Evoluzione V2 HX Espresso Machine has a heat exchanger which means you can brew and steam at the same time, hence the HX.
The machine is equipped with a nice, large boiler which gives a faster steaming.
Next, grind your coffee directly in the spout, don’t forget to press it well with the tamper and then simply screw the spout on the machine.

Prepare your two shots, pull the side handle and just watch how the Rocket Giotto Evoluzione V2 (HX) Espresso Machine is working its magic.
Once the shots are filled, press the handle back and that’s it.
As you can see, the Rocket HX Espresso Machine has a side screw with an actual milk frother attached on it, where you can easily froth your milk, right there and then, while your espresso is getting brewed.
This way you are shortening the time for preparing your favorite latte. I find this thing to be very practical and useful.
Besides the gorgeous look, the Rocket Giotto Evoluzione V2 (HX) Espresso Machine has two no-burn stainless steel hot water and steam wands.
You can see one of them on the other side, right next to the indicator handle, there is another pipe that is meant for water and steam releasing once you’re done.
So here what we know so far:
Insulated Boiler reflects up to a 30 percent increase in thermal stability and energy savings of up to 22 percent.
There is also a 1.8 liter copper boiler that is wrapped in a special insulating blanket.
The Rocket has an upgraded tamper; these HX espresso machines now include a metal tamper that I find pretty useful for the coffee press in the spout.
The Rocket has a dual pre-infusion system; the mechanical pre-infusion system has a progressively working piston and static pre-infusion chamber which results in a super smooth coffee extraction, strong coffee aroma and taste.
There is a rotary pump that has a special device to eliminate back pressure from the boiler, preventing blocks.
The Rocket really has it all, the only thing that may get in your way to get it is the price.
I won’t say that it is cheap, because it is far from what most people would consider an impulse purchase, but if you have decided to actually get an actual HX espresso machine, this one is actually priced pretty reasonably.

The Rocket Cellini Classic (pronounced Chell-ini) HX by Rocket Espresso Milano is quite impressive to look at, due to its solid steel construction giving the machine a positively gleaming appearance right out of the gate.
It is quite heavy to lift because of all of that steel as well, shipping at whopping pounds and weighing in at a svelte 62 lbs even after you unbox it.

Looking at the exterior in terms of materials, the Italian-made Cellini Classic has a steel outer case which is a combination of matt and polished finish, and a couple of plastic handles and knobs that make this a more affordable machine than some.
Indeed, if you were to nitpick the machine, you might notice a few spots where they used thinner plating, but the Cellini Classic does hide any sort of modesty well.
The 1.8 liter boiler is made out of copper, just the same as all the other Rockets. So, if you’ve used Rockets before, you’re dealing with the same boiler once again.
Just based on appearance alone, we’d say you’ve got yourself an espresso machine here that’s well suited for café life, and can rock a kitchen counter like no one’s business.

If you own a café and want something dependable yet impressive behind the counter, the Rocket Cellini would be a good choice as it certainly looks the part of a pro unit.
Luckily, it backs up its looks with some personality, so you don’t need to worry about the Cellini Classic being all show.
It may look a little complicated under the hood to the uninitiated, but, on the outside, the Rocket Cellini Classic very simple to operate for both barista and casual home user.
In any case, you’re better off taking this espresso machine in if you run into any issues, since its on the higher end and should only be worked on by a pro.
If you do want to do any kind of simple maintenance, for simpler jobs, there are four screws that can be removed that can be found beneath the cup tray on the top of the unit.
Inside, the design is such that there is a lot of room around the parts so nothing will get overheated and making any serious maintenance of this machine to be a rare event.
The well-fitted matte steel casing (matte on the sides, polished elsewhere) can of course be removed as well for repair work but, again, this would be a rarity as this machine is built to last.
There are fewer controls on here than with most espresso machines and there isn’t anything special that needs to be done except from filling the water tank occasionally, and cleaning your wands.
The Cellini Rocket Classic automatically maintains the water level in the boiler. If the water in the tank runs low, the machine switches off and even tells you with a flashing light.
Note – the Rocket’s water tank sensor isn’t a fan of RO or distilled water, and so the water in the tank should contain some minerals if you expect the tank’s sensor to do its job properly.

The Rocket Cellini Classic is very attractive and fits nicely on your counter under most cupboards, so it is not as big as some other monster-sized units. We have found the size to be very convenient.
The brew head is the professional E61 from the famous FAEMA company in Italy, and FAEMA products are the top of the line.
Coffee lovers would also love to know that the Rocket’s dual system will produce smoother coffee with superior aroma, body, and crema all because this system has a progressively working piston and static pre-infusion chamber.

The Cellini company has chosen to use a vibratory pump with a special device that eliminates back pressure from the boiler and blockages.
If you want to avoid burning yourself, choose the Rocket Cellini Classic because its steam wand has a two-hole tip and a hot water wand which are internally insulated and they are both stainless steel.
You might also enjoy the removable plastic cup rack which will reduce the espresso machine’s height.
You won’t have to take all the cups off the top of your espresso machine in order to refill it either because there is a separate lid for the 98 ounce water reservoir.

The water heats quickly and the extraction is superior. No hassles! No worries! Just delicious espresso!
Now for a bit of negative. The drip tray is decidedly small so it fills up easily.
Also, as we mentioned, a few of the parts could be slightly higher quality, but this is made up for by it being more affordable overall. Don’t forget to backflush as well.
